Vegan Eggnog

Vegan Eggnog


½ Cup Tofu
30 ml Cup Soy Milk
2 Tsp Honey
A Pinch of Salt
30 ml Water
30 ml Mansion House French Brandy
½ Tsp Vanilla Extract
Ice Cubes
Nutmeg Powder for Garnish


Blend together tofu, soymilk, sugar and salt in a blender until smooth.
Scrape this into a large bowl or pitcher, and whisk in the water, brandy and vanilla.
Mix well, cover and refrigerate until serving time.
To serve, blend half of the mixture in the blender with the ice cubes until frothy.
Repeat with the other half.
Serve in glasses with nutmeg sprinkled on top.
