60 ml Mansion House French Brandy
2 Tbsp Cream of Coconut
Half cup fresh or canned Pineapple
1 Tbsp Vanilla Ice cream
Half cup ice
Pineapple chunk for garnish
Pour the ingredients into a blender.
Blend until smooth.
Pour into a Collins glass.
Garnish with a chunk of pineapple.
Add some extra juice or ice cream to customise the mix!
